Cupcake recipe
- 2 cups of self-raising flour, sifted
- ¾ cup of caster sugar
- ¾ cup of milk
- 125g of butter, melted and cooled
- 2 medium eggs, beaten
- 1 teaspoon vanilla essence
- Preheat oven to 200ºC.
- Line a 12-hole muffin pan with paper cases.
- Combine flour and sugar in a bowl. Make a well in the centre.
- Add milk, butter, eggs, and vanilla essence, and stir with a large metal spoon gently until combined.
- Spoon the mixture into the paper cases.
- Bake for about 15 minutes. A skewer stuck in the centre of the cakes should come out clean.
