Cupcake recipe

  • 2 cups of self-raising flour, sifted
  • ¾ cup of caster sugar
  • ¾ cup of milk
  • 125g of butter, melted and cooled
  • 2 medium eggs, beaten
  • 1 teaspoon vanilla essence
  1. Preheat oven to 200ºC.
  2. Line a 12-hole muffin pan with paper cases.
  3. Combine flour and sugar in a bowl. Make a well in the centre.
  4. Add milk, butter, eggs, and vanilla essence, and stir with a large metal spoon gently until combined.
  5. Spoon the mixture into the paper cases.
  6. Bake for about 15 minutes. A skewer stuck in the centre of the cakes should come out clean.
